Menudo - cooking recipe

Ingredients
    5 c. tripe, well washed and trimmed
    3 c. canned hominy, drained
    6 qt. water
    2 onions, minced
    4 cloves garlic, crushed and roasted
    1 Tbsp. salt
    1 Tbsp. oregano
    minced green onions with tops
    peppery salsa
Preparation
    Cut cleaned and thoroughly washed tripe into slices about 1-inch wide and cook 1 hour in a large pot with water.
    Add the hominy, onion, garlic, salt and oregano.
    Simmer 6 to 7 hours.
