Nine-Bean Soup - cooking recipe

Ingredients
    2 c. mixed black beans, black-eyed peas, garbanzo beans, kidney beans, lentils, lima beans, mung beans, pinto beans, soybeans, split peas and/or white beans
    2 qt. water
    1 (1 lb.) ham bone, skin and fat removed
    1 large onion, chopped
    1 clove garlic, minced
    2 bay leaves
    1 (16 oz.) can tomatoes, coarsely chopped
    1/2 tsp. basil
    1/2 tsp. oregano
    1 (15 oz.) can seasoned tomato sauce
Preparation
    Rinse beans.
    Place in large stockpot with enough water to cover by 2 inches.
    Let soak overnight.
    Drain.
    Add 2 quarts water, ham bone, onion, garlic and bay leaves.
    Bring to a boil. Reduce heat.
    Simmer for 1 1/2 to 2 hours or until beans are tender, stirring occasionally.
    Add tomatoes, basil, oregano and tomato sauce.
    Simmer for 30 minutes longer.
    Remove ham bone and bay leaves.
    Serve hot.
    Yield:
    6 servings.
