Green Rice - cooking recipe

Ingredients
    2 c. uncooked rice
    4 c. boiling water
    2 1/2 tsp. salt
    6 Tbsp. oleo or butter
    1/4 c. minced parsley
    1 c. chopped, blanched almonds
Preparation
    Combine rice, water, salt and oleo and cook in tightly covered saucepan over low heat for 30 minutes without removing cover.
    Add parsley and almonds and toss lightly with a fork.
    Good with chicken or roast gravy.
    Serves 8.
