Crab Bisque - cooking recipe
Ingredients

1 stick margarine
1 1/2 medium onions, minced
1 medium carrot, finely minced
1/2 stick celery, finely minced
2 tsp. flour
2 Tbsp. cornstarch
1 tsp. chopped fresh parsley
1/4 tsp. salt
1/8 tsp. white pepper
1 qt. milk, heated
3 Tbsp. sherry
1/2 lb. crab meat, broken up
Preparation

Melt margarine in medium saucepan over medium-high heat.
Add vegetables and saute until soft.
Reduce to medium and add flour, whisking constantly until smooth.
Cook 5 minutes, whisking frequently.
Stir in parsley.
Gradually add milk, stirring constantly.
Add sherry, crab and salt to taste and simmer 15 to 20 minutes.
Do not boil.
(Use cornstarch now to thicken to liking.) Serve hot.
Have crackers with it.
Serves 6.
