Ginger Steamed Fish - cooking recipe

Ingredients
    1 or 2 (2 lb.) fish, cleaned with head and tail on
    flour
    3 or 4 Tbsp. peanut oil
    1 c. hot water
    1/4 c. shoyu sauce
    1/4 c. dry sherry
    1/2 tsp. raw sugar
    2 Tbsp. ginger, peeled and cut into thin strips
    2 to 4 green onion shoots, sliced into 2-inch pieces
Preparation
    Wash the fish under cold running water.
    Pat dry.
    Rub a little flour onto fish skin surfaces.
