Posh Squash - cooking recipe
Ingredients

2 lb. yellow squash
1 c. mayonnaise
1 c. grated Parmesan cheese
1 small onion, chopped
2 eggs, beaten
1/2 tsp. salt
1/4 tsp. pepper
1/2 c. soft bread crumbs
1 Tbsp. butter, melted
Preparation

Cook squash in boiling salt water to cover for 10 to 15 minutes or until tender.
Drain and cool slightly.
Combine mayo, cheese, onion, eggs, salt and pepper.
Then stir in squash gently. Put mixture into a lightly greased 1 1/2-quart casserole dish. Combine bread crumbs and butter and spoon over squash.
Bake at 350\u00b0 for 30 minutes.
Makes 6 servings.
