Orange Roughy With Creamy Mushroom Sauce - cooking recipe

Ingredients
    vegetable cooking spray
    1 1/2 c. sliced fresh mushrooms
    3/4 c. chopped onion
    1/8 tsp. pepper
    1/4 c. grated Parmesan cheese
    1 (8 oz.) carton plain low-fat yogurt
    4 (4 oz.) orange roughy fillets
    2 Tbsp. fine dry breadcrumbs
    paprika
    fresh parsley (optional)
Preparation
    Coat a large nonstick skillet with cooking spray.
    Place over medium heat until hot.
    Add next three ingredients, saute 3 minutes and set aside.
    Let cool.
