Cream Of Potato Soup - cooking recipe

Ingredients
    6 slices bacon
    4 c. potatoes, peeled and diced
    1 medium onion, diced
    2 Tbsp. instant chicken broth
    1 tsp. ground thyme
    1 Tbsp. oil (bacon grease may also be used)
    1/4 c. chopped ham
    2 c. heavy cream
    4 c. milk
    1 Tbsp. dry parsley flakes
    2 Tbsp. cornstarch, mixed in 1/4 c. water
Preparation
    Fry bacon until crisp.
    Crumble; set aside.
    Place the potatoes in a large stockpot.
    Add just enough water to cover. Add in the onion, instant broth, thyme, oil, bacon and ham.
    Bring to a boil; reduce heat and simmer until potatoes are tender. Drain off excess water.
    Return to heat; stir in the remaining ingredients.
    Blend until smooth and heat through.
