Fresh Pineapple "Sundaes" - cooking recipe

Ingredients
    1 fresh ripe Dole pineapple
    1 c. low-fat milk
    1/4 c. instant vanilla pudding mix
    6 Tbsp. chopped nuts
    3 Tbsp. shredded coconut
Preparation
    Twist crown from pineapple.
    Cut pineapple lengthwise into quarters.
    Cut fruit from shell and core.
    Cut pineapple into chunks.
    Divide into 8 serving glasses.
    Place milk and pudding mix into blender.
    Process for 40 seconds or until well blended. Transfer to a large bowl.
    Chill for 10 minutes.
    Spoon over pineapple chunks.
    Sprinkle with nuts and coconut.
    Great for summertime afternoon snacks!
