Vanilla Layer Cake With Chocolate-Ginger Frosting - cooking recipe

Ingredients
    1 c. plus 2 Tbsp. cake flour
    1 tsp. baking soda
    1/4 tsp. salt
    2 Tbsp. plus 2 tsp. reduced calorie tub margarine
    1 large egg
    2 tsp. vanilla extract
    1/2 c. skim milk
    1 1/4 c. part skim Ricotta cheese
    1/4 c. unsweetened cocoa powder
    1/4 c. firmly packed dark brown sugar
    2 tsp. unsalted butter, softened
    3/4 tsp. ground ginger
Preparation
    Preheat oven to 350\u00b0.
    Spray cake pans with nonstick cooking spray.
    In small bowl, combine cake flour, baking soda and salt. In medium bowl with mixer on high speed, cream sugar and margarine; add egg and 2 teaspoons of vanilla extract, beating until smooth. Gradually beat in flour mixture alternately with milk, until batter is smooth.
    Evenly divide batter between prepared pans; bake 15 to 20 minutes until toothpick inserted in center comes out clean.
    Let cakes cool in pans 5 minutes; remove cakes from pans and set on racks to cool.
    Transfer 1 cake to serving platter; set aside. Cover.
