Spanish Rice - cooking recipe

Ingredients
    2 large onions, diced
    1 green pepper, diced
    1 (16 oz.) can diced tomatoes
    1 (8 oz.) can tomato sauce
    1 Tbsp. sugar
    1 tsp. salt
    pepper to taste
    2 Tbsp. olive or vegetable oil
    2 c. instant rice
    1 1/2 c. shredded Cheddar cheese
Preparation
    You will need a 3 quart Pyrex or glass rectangular casserole dish.
