Ingredients

1 Tbsp. cornstarch
3 Tbsp. sugar
1/4 c. apple cider vinegar
juice from beets
1 (8 oz.) can sliced beets
Preparation

Blend cornstarch and sugar in saucepan.
Add vinegar and beet juice and cook on moderate heat until it begins to thicken, stirring constantly.
Add beets to sauce while shaking pan gently to prevent sticking.
Yields 3 servings.
