Diabetic Fruit Cake - cooking recipe
Ingredients

1 c. flour
3/4 tsp. baking powder
1/2 tsp. salt
1/2 c. liquid shortening
1/2 c. sugar substitute (3 Tbsp. or 12 envelopes)
2/3 c. dates
2/3 c. raisins
2/3 c. nuts
1/2 c. figs
2 eggs
1 tsp. cinnamon
1/2 tsp. nutmeg
1/4 c. skim milk or unsweetened fruit juice
Preparation

Mix all ingredients well.
Bake in a loaf pan at 300\u00b0 for 45 minutes.
This makes 18 slices of which equals out to 1 fat, 1 bread and 1/2 fruit.
