Angolan Chicken(Galirhamuamba) - cooking recipe

Ingredients
    1 (3 lb.) chicken, cut into pieces
    3 to 4 fresh red or green chili peppers, skin removed and chopped fine
    1/2 tsp. ground ginger
    1 large onion, chopped fine
    3 cloves garlic
    1 c. lemon juice
    2 c. water
    6 Tbsp. oil
    salt and pepper to taste
Preparation
    Combine chilies, ginger, oil, garlic, onions, salt, pepper, lemon juice, 1 cup water and oil; mix well.
    Place chicken pieces in mix and marinate at room temperature for 3 hours.
    Remove chicken and pat dry.
    Strain and reserve liquid and any solids. Brown chicken in remaining oil; add more oil if needed.
    Add solids from marinade and cook until onions are soft but not brown. Return chicken to pan and add 1/2 cup of the marinade and 1 cup water.
    Simmer 1/2 hour to 45 minutes.
    Serve with saffron rice.
