Peas 'N Rice - cooking recipe
Ingredients

1 c. rice
2 c. water
1 small onion, minced
1 green pepper, diced
1/4 c. bacon, diced
1 (8 oz.) can pigeon peas
1/4 c. (2 oz.) tomato paste
salt, black pepper, paprika and thyme to taste
Preparation

Fry bacon until crisp.
Add green pepper and onion to the pan and cook until onion is clear.
Add water, peas, tomato paste, salt, black pepper, paprika, thyme and rice.
Cover the pot with a tight fitting lid and simmer until all of the water has been absorbed.
