Sweet Potato Muffins - cooking recipe
Ingredients

1/2 c. butter or margarine, softened
1 1/4 c. sugar
2 eggs
1 1/4 c. cooked mashed sweet potatoes
1 c. milk
1 1/2 c. all-purpose flour
2 tsp. baking powder
1/4 tsp. salt
1 tsp. ground cinnamon
1/4 tsp. nutmeg
1/2 c. raisins, chopped
1/4 c. chopped pecans
Preparation

Cream butter; gradually beat in sugar.
Add eggs, one at a time, beating well after each.
Stir in sweet potatoes and milk. Combine flour, baking powder, salt, cinnamon and nutmeg; add to combined mixture, stirring just until moistened.
Stir in raisins and pecans.
Spoon in greased muffin pans filling 2/3 full.
Bake at 400\u00b0 for 25 minutes.
Yields 1 1/2 dozen.
