Cream Of Carrot Soup - cooking recipe

Ingredients
    1 lb. carrots, scraped and sliced
    4 c. chicken broth
    1 onion, chopped
    4 Tbsp. butter
    salt and pepper to taste
    1 c. heavy cream
    1/2 tsp. thyme (powdered)
Preparation
    Simmer carrots in chicken broth until tender, about 15 minutes.
    In another pan, saute onion in butter until limp, but not browned.
    Puree all in blender or food processor.
    Add salt, pepper, cream and thyme.
    Bring back to simmer, stirring constantly. Serve hot or chilled with a sprinkling of chopped parsley for garnish.
    Makes 6 servings.
