Red Beans And Rice - cooking recipe

Ingredients
    2 or 3 chicken breasts
    1 (1 lb.) bag small red beans
    1 can Ro-Tel tomatoes
    1 lb. Smoky Hollow smoked sausage
    4 to 5 c. cooked rice
    1 lb. Monterey Jack cheese, grated
    garlic powder to taste
    1 large onion, diced
    salt and pepper to taste
    Louisiana hot sauce to taste (optional)
Preparation
    Cook beans, chicken, Ro-Tel, onion, garlic, salt and pepper together in a crock-pot until beans are tender and chicken is done.
    (Water should be at least 2 inches over top of ingredients; you may have to add more during cooking.)
    Add sliced smoked sausage.
    Remove chicken, debone and tear into pieces.
    Place cooked rice, beans and sausage mixture and chicken in a large stock pot.
    Add grated cheese; heat on low until everything is hot and cheese melts.
    Stir to prevent sticking.
    (You may have to add a little water if it is too dry.)
