Mushroom Crust Quiche - cooking recipe

5 Tbsp. butter
1/2 lb. mushrooms, chopped
1/2 c. chopped soda crackers
3/4 c. chopped green onion
2 c. shredded Jack cheese
1 c. cottage cheese
3 eggs, beaten to blend
1/4 tsp. paprika
Preparation

Preheat oven to 350\u00b0.
Lightly butter a 9-inch pie plate. Melt 3 tablespoons butter in skillet over medium heat.
Add mushrooms and stir until tender, about 4 minutes.
Remove from heat.
Stir in cracker crumbs.
Press into bottom and sides of plate.
Melt 2 tablespoons of butter in skillet.
Add onions and stir to soften, about three minutes.
Sprinkle over crust.
Top with Jack cheese.
Blend cottage cheese, eggs and paprika in processor.
Pour over cheese.
Bake about 35 minutes until tester inserted in center comes out clean.
