Apple-Leek Soup - cooking recipe

Ingredients
    1 lb. leeks (white part), washed and sliced
    1/4 c. unsalted butter or 1/4 c. olive oil
    1 (14 oz.) can chicken broth
    1 lb. cooking apples (McIntosh), peeled, cored and sliced
    1/2 lb. potatoes, peeled and sliced
    2 c. 2% milk or skim milk
    1/2 tsp. coriander
    white pepper to taste
Preparation
    Melt butter (or heat oil) in saucepan.
    Add leeks, stirring often, and heat 5 to 7 minutes.
    Add potatoes, apples and chicken broth.
    Bring to boil, reduce heat and simmer 20 minutes until apples and potatoes are tender.
