Cheese Soup - cooking recipe

Ingredients
    3 medium potatoes
    5 c. beef broth
    2 Tbsp. peanut oil
    1 small onion, diced
    1 clove garlic, minced
    1 (16 oz.) can tomatoes
    1 small to medium hot pepper, diced (optional)
    6 sliced mild American cheese
Preparation
    Add potatoes to broth in large kettle and cook over moderate heat until potatoes are tender.
    Heat oil in skillet and add onion and garlic.
    Stir-fry until tender, but not brown.
    Add tomatoes to skillet and stir about ten minutes until mixture has thickened a little.
    Add to potato broth mixture and cook about five more minutes.
    Add cheese to hot soup and serve as cheese is melting.
