Summertime Chicken Salad - cooking recipe
Ingredients

1/2 c. light mayonnaise
2 Tbsp. lemon or lime juice
1 tsp. sugar
1/2 tsp. ground ginger
1/4 tsp. salt
1/8 tsp. pepper
1 tsp. curry powder (optional)
2 c. cooked chicken
4 peaches or nectarines, cubed
1 c. chopped celery
1/4 c. chopped green onions
1/4 c. toasted almonds (optional)
Preparation

In large bowl, whisk together first 6 ingredients.
(For curried chicken salad, whisk in curry powder).
Stir in chicken, peaches, celery and green onions.
Cover and chill.
Before serving, stir in almonds, if desired.
Makes 6 servings.
