Chicken Florentine - cooking recipe

Ingredients
    1 boned chicken breast
    flour, salt and pepper
    2 Tbsp. chopped onion
    1 small garlic clove
    1/4 to 1/2 lb. chopped fresh spinach
    Parmesan cheese
Preparation
    Use amounts for each serving.
    Pound breast flat and dredge with flour, salt and pepper.
    Brown lightly in olive oil.
    In a separate pan, saute garlic, onion and chopped spinach in 1 tablespoon olive oil until wilted.
    Season with salt and pepper to taste.
    Place spinach in a small baking dish.
    Top with browned breast of chicken and sprinkle with cheese.
    Bake at 350\u00b0 for 25 to 30 minutes.
