Valerie'S Cordon Bleu Chicken - cooking recipe

Ingredients
    2 to 2 1/2 lb. cut up fryer or chicken breasts
    3 Tbsp. butter
    1/4 c. flour
    2 tsp. salt
    1/4 tsp. pepper
    1/4 tsp. thyme
    4 green onions, chopped
    2 medium tomatoes, diced
    2 Tbsp. chopped parsley, chives
    1/4 lb. mushrooms, cut into quarters
    1/8 c. white wine or apple cider
    2 Tbsp. lemon juice
    1 tsp. sugar
    1 tsp. salt
Preparation
    Heat butter in skillet.
    Mix flour, salt, pepper and thyme in a paper bag.
    Shake chicken pieces in bag.
    Brown chicken thoroughly in skillet.
    Add onions and mushrooms.
    Cover and simmer 5 minutes.
    Mix lemon juice, sugar, salt, wine and pour over chicken.
    Cover and simmer 5 minutes.
    Add tomatoes and cook slowly over low heat 1/2 hour or until chicken is fork-tender. Sprinkle with parsley and chives.
    Serve hot.
    Serves 6.
