Chicken Yakitori - cooking recipe

Ingredients
    1 lb. boneless chicken breasts
    1 small bunch scallions
    1 garlic clove, minced
    1/4 c. soy sauce
    2 Tbsp. lemon juice
    2 Tbsp. vegetable oil
    1 tsp. sugar
    1/2 tsp. salt
    1/4 tsp. ground ginger
    1/8 tsp. pepper
Preparation
    Remove any skin from the chicken.
    Cut meat into 1-inch cubes and
    place in bowl.
    Trim and wash scallions; cut enough thin slices for 1/4 cup.
    Cut remaining scallions into 2-inch sticks and set aside.
    Combine sliced scallions and remaining ingredients in a jar; cover.
    Shake well and pour over chicken cubes.
    Cover the bowl and marinate in refrigerator for 3 to 4 hours, stirring occasionally.
    Thread chicken cubes on skewers, alternating with scallion sticks.
    Place skewers on a broiler rack or out over grill 4 inches from heat and cook 1 to 2 minutes on each side until chicken is done.
    Serves 4.
