Ingredients

1 1/2 c. sugar
2 Tbsp. all-purpose flour
3 large eggs, lightly beaten
1/4 c. butter or oleo, melted
1/2 c. buttermilk
1 tsp. vanilla extract
3 1/2 oz. can flaked coconut
1 unbaked 9-inch pastry shell
Preparation

Combine sugar and flour; set aside.
Combine eggs and next 3 ingredients; add sugar mixture, stirring well.
Stir in 2/3 cup coconut; pour into pastry shell.
Bake at 325\u00b0 for 30 minutes. Sprinkle with remaining coconut.
Bake an additional 30 minutes or until set. Yields one 9-inch pie.
