Chicken Stir-Fry - cooking recipe
Ingredients

2 Tbsp. vegetable oil, divided
2 c. chopped broccoli
1 large carrot, cut into 2-inch strips
3 green onions, sliced
1 clove garlic, minced
1 c. mushrooms, sliced
3 chicken breast halves, skinned boned and cut into 1-inch pieces
1/2 c. commercial Italian salad dressing
1 Tbsp. soy sauce
1/2 tsp. ground ginger
hot cooked rice
Preparation

Pour 1 tablespoon oil into a wok or large skillet coating bottom and sides; heat to medium high (325\u00b0) for 2 minutes.
Add broccoli and next 4 ingredients; stir-fry 4 minutes.
Remove vegetables from skillet.
Pour remaining 1 tablespoon oil into wok.
Add chicken; stir-fry 4 minutes or until tender.
Return vegetables to wok; stir in salad dressing, soy sauce and ginger. Serve over rice.
Yields 3 to 4 servings.
