Chicken Enchiladas - cooking recipe

Ingredients
    2 Tbsp. salad oil
    1 medium diced onion
    2 tsp. chili powder
    1 (15 oz.) can tomato sauce
    Cheddar cheese
    Monterey Jack
    1 (8 oz.) can stewed tomatoes
    3 c. cooked chopped chicken
    sour cream to your taste
    flour tortillas
Preparation
    Preheat oven to 350\u00b0. Saute onion in oil until tender. Stir in chili powder. Cook 1 minute. Add tomato sauce, stewed tomatoes and 1/2 teaspoon salt. Cook over high heat until boiling. Reduce heat and simmer until sauce thickens slightly. In large bowl, mix chicken, green chilies, sour cream and salt. Place 1/2 cup chicken mixture along edge of tortilla and roll. Pour 1/2 tomato sauce into 9 x 13 dish. Sprinkle with cheeses. Place rolled enchilada seam side down. Pour remaining sauce on top. Sprinkle with cheese. Bake until bubbly.
