Chicken Marsala(Poultry) - cooking recipe

Ingredients
    1 roasting chicken, cut in serving pieces
    4 oz. butter
    1/4 c. water
    1/2 c. Marsala (heavy sweet sherry)
    1/4 lb. fresh sliced mushrooms
    salt and pepper to taste
    1 onion, diced
Preparation
    Sprinkle chicken pieces with salt and pepper to taste.
    Melt butter in skillet.
    When very hot, add chicken.
    Brown on both sides for about 5 minutes.
    Add onion and brown for 2 minutes on a lower flame.
    Add water and cover.
    Simmer 20 minutes or until tender.
    Add Marsala and mushrooms.
    Simmer for 10 minutes.
    Serve with rice.
