Chicken Gumbo - cooking recipe
Ingredients

2 1/2 to 3 lb. chicken breast
8 c. water
3/4 c. chopped onion
1/4 c. chopped celery
1 large can tomatoes
10 oz. okra
1/2 c. uncooked rice
celery tops, chopped
2 1/2 tsp. salt
1 tsp. pepper
1 small pkg. mixed vegetables
1 (10 oz.) pkg. lima beans
1 (10 oz.) pkg. corn
seasonings of choice (optional)
Preparation

Place chicken in large pot with water and celery tops.
Boil until chicken is tender.
Remove chicken and set aside until cool. Debone and chop chicken.
Add vegetables, celery, onion, okra, corn, lima beans, mixed vegetables and tomatoes to broth; boil approximately 30 to 40 minutes stirring occasionally.
Add chicken and rice and boil 30 minutes more.
May add water if needed.
