Gingered Sweet Potatoes - cooking recipe
Ingredients

2 medium sweet potatoes, peeled and diced
1 Tbsp. fat-free margarine
1 tsp. brown sugar
1/4 tsp. ground ginger or pumpkin pie spice
Preparation

Arrange potatoes in a steaming rack. Place over boiling water; cover and steam until tender. Remove and place in serving dish. Combine remaining ingredients; blend well. Toss with hot sweet potatoes. Makes 4 servings, 1/2 cup each. Exchange: 1 1/2 starches.
