Parmesan Zucchini - cooking recipe

Ingredients
    3 to 4 large, sliced zucchini squash
    1 large, chopped bell pepper
    1 large, chopped onion
    4 stalks chopped celery
    4 medium cloves garlic
    1/4 c. ground Parmesan cheese
    1/2 tsp. Italian seasoning
    1/2 tsp. ground oregano
    4 medium tomatoes, peeled and chopped (1 large can tomatoes may be used instead)
    2 Tbsp. vegetable cooking oil
Preparation
    Heat oil in covered frying pan to medium heat.
    Add garlic (chopped) and saute.
    Add bell pepper, celery and onion.
    Saute until onion is tender.
    Add squash, tomatoes and seasoning to mixture.
    Add salt and pepper to taste.
    Cover and let simmer on medium heat until vegetables are tender and mixture has thickened. Serve in dish with Parmesan cheese covering top.
