Ingredients

2 medium cucumbers
3/4 c. plain nonfat yogurt
1/4 c. light (33% less fat) sour cream
1 small clove garlic, minced
1 Tbsp. lemon juice
2 tsp. thinly shredded lemon peel
1/4 tsp. salt
1/4 tsp. black pepper
red leaf lettuce leaves
lemon slices (optional garnish)
Preparation

With vegetable peeler, remove several lengthwise strips of peel from each cucumber.
Halve cucumbers lengthwise and scrape out seeds; thinly slice.
Place cucumbers in medium bowl; stir in next 7 ingredients.
Serve cucumber salad on lettuce; garnish with lemon.
