Eggplant Casserole - cooking recipe

Ingredients
    3 large eggplant, peeled
    1/2 lb. sausage
    3 green onions, chopped
    1 c. onions, chopped
    1 c. celery, chopped
    1 (6 1/4 oz.) pkg. cornbread stuffing mix
    1/2 tsp. black pepper
    1/2 tsp. salt
    2 c. grated cheese
Preparation
    Cook eggplant; drain.
    Cook sausage, saute onions and celery. Prepare stuffing mix according to package instructions.
    Mix all together.
    Bake for 20 minutes in a 325\u00b0 oven.
    Top with cheese. Cook until cheese is melted.
