Flounder With Dill - cooking recipe

Ingredients
    4 small unpeeled tomatoes, each cut into 4 (1/4-inch thick) slices
    vegetable cooking spray
    4 (4 oz.) flounder fillets
    1/4 c. fine dry bread crumbs
    1 Tbsp. grated Parmesan cheese
    1 1/2 tsp. chopped fresh dill
    1/4 tsp. salt
    1/8 tsp. white pepper
    1/8 tsp. ground red pepper
    1 Tbsp. margarine, melted
    fresh dill sprigs (optional)
Preparation
    Place tomato slices in a 13 x 9 x 2-inch baking dish coated with cooking spray. Arrange fillets on top of tomatoes.
    Combine bread crumbs and next 5 ingredients in a bowl.
    Stir in margarine. Sprinkle evenly over fillets.
    Bake at 425\u00b0 for 13 minutes or until fish flakes easily when tested with a fork.
    Garnish with fresh dill, if desired.
