Green Rice Casserole - cooking recipe

Ingredients
    2 c. uncooked rice (white)
    1 c. parsley, chopped
    1 bell pepper, ground
    2 tsp. salt
    2 c. sharp cheese, grated
    2/3 c. cooking oil
    3 eggs, well beaten
    1 c. milk
Preparation
    Boil and blanch rice.
    Combine with remaining ingredients. Pour into 9 x 13-inch casserole dish (can make 2 smaller dishes and freeze one).
    Bake at 350\u00b0 for 40 to 45 minutes.
    Serves 12. Dish can be frozen after it is baked.
