Swiss Broccoli Soup - cooking recipe

Ingredients
    5 1/2 c. whole milk
    1 (10 oz.) pkg. frozen chopped broccoli or 1 1/2 c. fresh, chopped
    3 Tbsp. onion, chopped
    2 Tbsp. butter
    1 Tbsp. flour
    2 c. Swiss cheese, grated (8 oz.)
    1/4 tsp. salt
Preparation
    Heat milk in large saucepan until simmering.
    Cook broccoli and onion in milk until tender.
    Melt butter in small saucepan; stir in flour.
    Add butter flour mixture to milk.
    Cook and stir 3 minutes.
    Remove from heat and add cheese and salt.
    Stir until cheese is melted.
    Serve immediately.
    Makes 8 servings.
