Cheese And Rice Omelette(Italian Style) - cooking recipe

Ingredients
    8 eggs
    salt and black pepper to taste
    3 Tbsp. butter
    1/4 lb. Mozzarella cheese, diced
    2 oz. cooked ham, diced
    1 c. warm boiled rice
Preparation
    Beat eggs lightly.
    Add salt and pepper to taste.
    Heat in heavy saute pan and pour in eggs.
    Saute as you would an omelet. Mix together the cheese, ham and rice.
    When the omelette is set but still moist, spread the rice mixture down the middle.
    Fold omelette over with a spatula.
    Continue cooking over low heat until omelette and rice are heated through.
    Serves 4.
