Split Pea Soup - cooking recipe

Ingredients
    2 c. dry split peas
    2 qt. water
    1 ham hock or 1 c. diced ham
    1/2 c. finely chopped celery
    1/2 c. thin sliced carrots
    1 tsp. finely chopped onion or 1 pkg. dry onion soup mix
Preparation
    Simmer in crock-pot for 5 to 8 hours, or boil gently 2 to 3 hours in a large kettle.
    Take meat off bone; return to soup.
    Add salt and pepper to taste.
    Can puree with hand held blender, if desired.
    Makes 8 servings.
