Scones With Berries - cooking recipe

Ingredients
    2 c. all-purpose flour
    1 Tbsp. baking powder
    2 Tbsp. unsalted butter, chilled and cut into small pieces
    1 c. buttermilk
    1 1/2 c. unsweetened frozen mixed small berries
    butter-flavored cooking spray
Preparation
    Preheat oven to 400\u00b0. Line a baking sheet with parchment paper. Keep berries frozen until time to use. In a large bowl, whisk together unsifted flour, sugar, baking powder and salt. Mix in butter until mixture is size of fine crumbs. Stir in buttermilk and then stir in berries. Be careful to use the fruit and not the liquid. Shape dough into two 7-inch circles on prepared baking sheet. Cut each circle into 6 wedges and coat with cooking spray. Bake until cooked through and golden, about 20 minutes. Yields 1 wedge per serving.
