Cream Of Potato Soup(Especially Irresistible On A Cold Day.) - cooking recipe
Ingredients

4 large branches celery and leaves
2 medium onions
1 1/2 c. water
2 chicken bouillon cubes
1 1/2 c. mashed potatoes
1 Tbsp. butter
2 c. milk
dash of paprika
chopped chives or parsley
4 medium potatoes, peeled
1 medium onion, sliced
4 c. boiling water
1/3 c. diced summer sausage
1/2 tsp. thyme leaves
1/2 tsp. marjoram leaves
1 1/2 tsp. salt
pepper
2 Tbsp. butter or regular margarine
1/2 c. grated sharp cheese
1 Tbsp. grated Parmesan cheese (optional)
Preparation
-
Cut potatoes in halves.
Cook with onion in 2 cups boiling water until tender.
Do not drain.
Mash potatoes.
Add sausage, thyme, marjoram, salt, pepper, butter, sharp cheese and remaining boiling water.
Simmer 10 minutes.
Add grated cheese just before serving.
Makes 6 servings.
