Cranberry Orange Relish - cooking recipe

Ingredients
    1 orange
    4 c. fresh or frozen cranberries, thawed
    2/3 c. sugar
    1/4 c. chopped pecans
    2 Tbsp. chopped crystallized ginger
Preparation
    Peel orange; reserve fruit for other use.
    Cut up peel into 1-inch pieces.
    In food processor bowl, finely grind orange peel (about 15 seconds).
    Add half of cranberries; process until coarsely chopped.
    Place in large bowl; stir in pecans and ginger. Cover; refrigerate until flavors are blended (at least 2 hours). Makes 24 servings.
