Fiesta Burritos - cooking recipe

Ingredients
    10 (8-inch) flour tortillas
    1 pkg. taco seasoning
    1 1/2 c. tomato juice (I use 8 oz. tomato sauce and water to make 1 1/2 c.)
    1 Tbsp. oil
    1/2 lb. ground beef
    1 can refried beans
    2 c. shredded Cheddar cheese, divided
    1 1/2 c. shredded lettuce (optional)
Preparation
    Combine taco mix, tomato juice and oil.
    Mix well and set aside.
    Cook beef until brown; drain.
    Stir in beans and 1/2 cup tomato juice mix.
    Bring to boil; cover and simmer 5 minutes, stirring occasionally.
    Remove from heat.
    Place 1/4 cup beef mixture and 2 1/2 tablespoons cheese on center of each tortilla. Roll up and place seam side down in lightly greased 13 x 9-inch pan.
    Pour extra juice over tortillas.
    Cover (with foil) and bake at 350\u00b0 for 15 minutes.
    Uncover.
    Sprinkle with remaining cheese and bake 5 minutes more.
    Sprinkle with lettuce, if desired.
    We serve with sour cream.
