Zucchini Soup - cooking recipe

Ingredients
    4 c. chopped zucchini
    2 Tbsp. olive oil
    2 Tbsp. parsley
    1 Tbsp. butter
    1 large onion or 3 scallions, chopped
    3 medium tomatoes, chopped
    2 tsp. salt
    1/8 tsp. pepper
    1 tsp. basil
    1 tsp. poultry seasoning
    4 chicken bouillon cubes
    4 c. water
    1 to 2 cloves garlic (optional)
Preparation
    Put all ingredients into stew pot and simmer for 35 minutes. Top each bowl with Parmesan cheese.
