Apple Muffins - cooking recipe

Ingredients
    3 eggs
    1 1/4 c. Crisco oil
    2 c. sugar
    1 tsp. vanilla
    2 1/2 c. self-rising flour
    1 c. coconut
    1 c. chopped pecans
    2 medium apples, peeled and chopped
Preparation
    Preheat oven to 325\u00b0 to 350\u00b0.
    Beat eggs, sugar and oil until creamy.
    Add flour slowly.
    Batter will be quite stiff.
    Fold in remaining ingredients.
    Fill muffin cups with batter, about 1/2 full.
    Bake for 25 to 30 minutes or until done.
    Yield: Approximately 36 muffins.
