Butterscotch Apple Cake - cooking recipe

Ingredients
    2 eggs
    2 c. sugar
    1/2 c. vegetable oil
    2 tsp. vanilla
    2 c. all-purpose flour
    2 1/2 tsp. cinnamon
    2 tsp. baking soda
    1 tsp. salt
    1/4 tsp. nutmeg
    4 c. peeled, tart apples, chopped
    1 c. walnuts
    1 c. butterscotch chips
Preparation
    In a large mixing bowl, combine eggs, sugar, oil and vanilla. Combine dry ingredients; add to egg mixture and mix well (batter will be stiff). Stir in apples and nuts. Spread into greased 9 x 13-inch pan. Butterscotch chips are sprinkled over top of batter. Bake at 350\u00b0 for 45 to 50 minutes.
