8 Calorie Chocolate Kisses(The Wonderful Taste Of Chocolate With No Cholesterol Or Fat.) - cooking recipe

Ingredients
    3 egg whites (room temperature)
    1/2 tsp. cream of tartar
    1 c. superfine sugar
    2 Tbsp. unsweetened cocoa, sifted
Preparation
    Beat egg whites in a small bowl at high speed until foamy; add cream of tartar and beat until egg whites hold stiff peaks when beaters are lifted from mixture.
    Beat in sugar, 1 tablespoon at a time.
    When all sugar has been added and mixture holds stiff peaks but is still glossy, gently fold in sifted cocoa, 1 tablespoons at a time.
    (Do not beat meringue after stiff peaks are formed.) Spoon kisses by scant teaspoon, 1 inch apart, onto an ungreased nonstick baking sheet.
    Bake in a preheated 275\u00b0 oven for 20 minutes or until kisses are \"dry\" to touch.
    Cool on pan before removing.
    When completely cool, store in a dry, airtight cookie tin.
    Yields 9 dozen.
