Curried Zucchini Soup - cooking recipe

Ingredients
    2 lb. zucchini, cubed
    2 Tbsp. butter
    1 Tbsp. curry powder
    4 tsp. ground cumin
    1/2 c. watercress, chopped
    2 c. chicken broth
    3 c. buttermilk
    salt and pepper
    1 carrot, minced
    1/4 c. parsley, minced
Preparation
    Cook zucchini in butter until tender.
    Add curry, cumin and chicken broth; bring to boil.
    Let cool.
    Puree soup mixture in food processor.
    Beat in buttermilk and chill.
    Combine carrot, watercress and parsley.
    Top each serving of soup with this mixture.
