Ingredients

1 1/2 lb. beets
1/3 c. granulated sugar
1/2 tsp. salt
1 Tbsp. cornstarch
1/2 c. vinegar
2 Tbsp. butter
1 tsp. minced onion
Preparation

Cook beets until tender; cool slightly.
Peel and dice.
Blend sugar, salt and cornstarch in another pan.
Add vinegar; stir until mixed.
Cook until thick and smooth.
Stir constantly.
Add butter and onion.
Stir; pour over beets (heat if desired).
Makes about 6 servings.
