Eggplant Parmesan - cooking recipe
Ingredients

2 eggplants
4 eggs, beaten with a little milk
2 c. seasoned bread crumbs
1/2 c. grated Romano cheese
1 qt. spaghetti sauce
1 lb. sliced Provolone cheese
1 lb. browned ground beef or 1 lb. Italian sausage
cooking oil
Preparation

Peel and slice eggplant lengthwise, about 1/4-inch thick.
Dip in egg, then bread crumbs.
Fry in oil, changing if necessary. Drain well on paper towel.
In a 9 x 12-inch pan, scoop sauce on bottom.
Then place eggplant meat and both cheeses.
Repeat in layers until ingredients are done.
Cover with sauce.
Cover with foil and bake at 350\u00b0 for 25 to 30 minutes.
Let stand before cutting and serving.
